Masala Bhindi (Okra, Lady finger, etc.)

Mom's Bhindi Masala!I’m back, after a hiatus from cooking! And I’m kicking things off with an easy-to-make tasty recipe from my mother. This is one of the ways bhindi (or okra) tastes really good.

Ingredients (serves 3):

  • 1 lb. Bhindi (or Okra, or Lady finger) cut in thirds. Buy this frozen, or fresh.
  • 1 small tomato, grated OR 4 oz. tomato paste (2/3 of small can).
  • 1 tsp. Cumin powder
  • 1/2 tsp. Turmeric powder
  • 1/2 tsp. Red chilli powder
  • ~2 tbsp. high temperature oil (I use almond oil, but vegetable, canola, or sunflower oil will work as well)
  • Salt

Pan fry cut okra on medium heat till it’s not mucus-y any more; but the okra should still be green. My mother says to deep-fry, but I’ve found pan frying works as well.
If there’s remaining oil, wait for the oil to cool down. Otherwise, in a cold pan, pour ~2tsp. of high temperature oil and add the spices. Heat and stir till things start bubbling.
Add the grated tomato (or paste with ~1 cup water) and stir till all the ingredients are mixed thoroughly (~5 mins).
Add okra and salt (to taste), and stir.

Done! Eat with rice.
