Vegetarian Nachos

Last night the husband was craving tacos…… didn’t want to go to a restaurant and wasn’t in the mood to go through all the lettuce and tomato chopping business. A light bulb went on and nachos were the universal solution…. not as much effort as making tacos, and yet very satisfying. R made these delicious nachos for us and I must say they are now my favorite thing he makes, next only to his yumilicious breaded okra (oh! but that’s another post). Infact, I like all things he makes. Isn’t there a charm in when the significant other cooks? Makes me feel like a queen, not to mention the food tastes heavenly…. I’m sure coz his secret ingredient is Love!  Here it is…..

Vegetarian Nachos

Ingredients to Serve 2

  • 1 bag of your favorite yellow corn tortilla chips
  • 1 16-oz can of refried beans. Get the ones marked “Vegetarian”, but even then check the ingredients to make sure there isn’t any lard
  • 1 8-oz can of black olives, sliced
  • 1/2 cup jalapenos, sliced
  • 1/2 cup onions, chopped
  • 2 cups mild cheddar cheese, shredded
  • a dollop of sour cream
  • and some love, to taste

Very important note: All of the ingredients listed above should be varied according to what you like more of.

We like to make this on dinner plates individually for each person. So, take 2 dinner plates and spread a layer of chips to cover the entire surface of the plates. Also, make sure the chips are placed side by side touching each other, but not overlapping!

The key is to “treat each chip with respect”. The way to do that is to get a little bit of each ingredient on each chip. Start with the beans and end with the cheese.

Once you have the first layer ready, spread a second layer of chips and all the ingredients.

Microwave on high for 2 minutes or until the cheese melts.

Caution: I know you want to dig in, but those beans are going to be very hot! Please let it sit for a bit.

A dollop of sour cream on top and a comfortable couch does the trick.

    I love nachos! My kids, hubby and I have a “nacho-night” on a weekend with some good movies on….its something i look forward to! I love guacamole in this too.
