Karina’s Polenta Dish

Here’s a recipe, that I have made several times, from my favorite food blogger. Karina Allrich makes not only gluten free food but also some really delicious and inspiring vegetarian food…. which is a big yaaaayyyyyy factor for me. There hasn’t been any recipe that I’ve tried from her blog and not been all gaa-gaa about. Not just me, even my family members and friends who have tried her recipes love them and join me in ranting and raving about them. This is a beautiful (yes, it looks great too) and equally yummm recipe, not to mention easy and healthy as well!

Karina has been a constant source of inspiration for a novice blogger like me. Cheers to you, Karina!

Karina's Roasted Vegetables on Broiled Polenta

As she says, this is a perfect recipe for a lazy day when all you want to do is curl up with a book and a warm blanket. I was totally having one of those days when I made this. Here’s how it worked out with the ingredient list:

  • 1 fabulous sweet or red onion, chopped – Check
  • 1 heaping cup or so of cut broccoli florets – Didn’t have, put asparagus instead
  • A handful of grape tomatoes – Check
  • 1 1/2 cups or so of slaw mix (shredded cabbage) – Didn’t have, left it out
  • 1 green bell pepper, cored and sliced – Check
  • 1 red or yellow bell pepper, cored and sliced – Check
  • 2-3 carrots, sliced into sticks – Didn’t have, put green beans instead
  • 1 zucchini squash, sliced into half moons – Didn’t have, left it out
  • 1 yellow squash, sliced into half moons – Didn’t have, put some more asparagus
  • 6 cloves of garlic, chopped – Check
  • Goat cheese – Didn’t have, used parmesan instead

    Aw. Thank you for your kind words. Much appreciated. I’m glad you like my vegetarian recipes- my personal favorites, too. And what could be more comforting than polenta and roasted veggies? Yum.
