Spinach Waldorf Salad

It’s summer, hot, dry, over 100 degree summer and that definitely puts me in the mood for some light, refreshing meals. What better than a simple salad? Here’s an easy and yum spinach salad, inspired by the traditional Waldorf salad.

Spinach Waldorf Salad

Ingredients to Serve 2

  • 2 handfuls of baby spinach
  • 1 apple cored and sliced
  • 2 tablespoons raisins, of your choice (optional)
  • 1/4 cup walnuts
  • 1/4 cup feta cheese

For the dressing:

  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons freshly squeezed lemon juice
  • Just a dash of balsamic vinegar

Mix the ingredients for the dressing in a salad mixing bowl.

Add the rest of the ingredients and toss gently.

Serve.

This salad makes a nice light meal by itself, or serve it with a sandwich and some fruits! Works wonders, I think!
