Veggie Burrito, Chipotle Style

I must say I enjoy Chipotle burritos and bowls and as nice as it is to go there, pick all my ingredients, pay and enjoy the burrito, it is even better to sometimes simulate the experience at home…. of course, minus the lines, all the waiting and the instant freeze (any one noticed how all Chipotles are coooold! brrr!).

Here it goes:

Veggie Burrito, Chipotle Style

Ingredients to Serve 1

  • 1 large tortilla (we used tomato and spinach flavored)
  • 1/2 green bell pepper, cut length wise
  • 1/4 onion, cut length wise
  • 1 tablespoon sour cream
  • 2 tablespoons guacamole
  • 1/4 cup Vigo Black beans and rice mix
  • 1 tablespoon salsa of your choice
  • handful of grated cheese of your choice
  • 2 tablespoons pico de gallo
  • 1 teaspoon vegetable oil
  • a pinch of black pepper
  • dash of lime juice
  • salt to taste
  • Any other ingredients you’d like

Black beans and rice: You can find Vigo Black beans and rice mix in most grocery stores. It’s a Cuban mix, and is basically what the name suggests,…. rice and black beans. That’s about it. You can make rice and black beans separately, but I found this mix to be quiet quick, handy and flavorful. So, make that according to directions and you’ll need about 1/4 cup of it.

Get you fajita vegetables ready: In a skillet, heat the vegetable oil. Throw in the onions and bell pepper and saute them for 3-4 minutes. We don’t want to over cook them….. Still want that wonderful crunch factor. Add the salt and black pepper. Saute for a minute or two and add take it off the heat. Add a dash of lime juice and set aside.

Pico de gallo: is one of those things where you can feel free to use your imagination. It’s basically tomatoes, onions, peppers, and lime juice all tossed together, but sometimes to jazz it up a little I’ll add mangoes and pomegranate. I guess this calls for a separate recipe. Will do so soon!

Tortilla: Heat your tortilla just a little bit…. just enough to get it ready so it knows it’s going to be devoured soon.

Assemble: It’s all about getting it all together from here. Lay the tortilla flat and create a base of rice and beans over that. They form a lovely foundation for the rest of the ingredients yet to join the party. Now, spread your vegetables and also the salsa. Followed by some of that delicious guacamole and pico de gallo. To calm it down a little add some sour cream and sprinkle your favorite cheese.

Time to rock and roll: Fold and hold down two sides of the tortilla and roll from one end to the other.

That’s it. Enjoy this easy to make and yummy burrito… perfect for a quick southwestern getaway.
