Heavenly Mac n Cheese

If I were asked to name one food that I’m thankful to this country for… it would be Mac n Cheese. If I were asked to name a comfort food I have started craving in my adult life… it would be Mac n Cheese. If I were asked to name a food that would be liked by people all over the world… it would be Mac n Cheese.

A few days back I was craving some of this goodness…….. But not just any mac n cheese, definitely not the boxed variety or the chain restaurant type, but the baked at home, crunchy on top, gooey inside type….. warm and golden type… make you smile type. Went to a restaurant and it tasted like it was made from the box. Looked tirelessly for a diner, a nice Southern diner…. they are bound to have good home-made mac n cheese, I thought. But, alas! this city disappoints me! Can you believe it there aren’t many old fashioned diners here and if there are they sure are tough to find. Anyway, I gave up and decided to experiment on my own and make me some of that comforting food.

I think Mac n Cheese is one thing that people take for granted and that’s why can’t appreciate. But, the way to really enjoy it is to treat it with respect. Use real, good quality cheese, put some effort into it, leave the microwave alone and life will be better for ever.

Heavenly Mac n Cheese

Mac n Cheese

Ingredients to make 6 individual ramekin servings

  • 4 oz elbow Macaroni
  • 1.5 cups milk
  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon Dijon mustard
  • 1 teaspoon black pepper powder
  • 100 grams aged cheddar, broken to small pieces
  • 50 grams Gruyere cheese, broken to small pieces
  • 6 teaspoons of Parmesan cheese

Preheat the oven to 250 degrees.

Start with the macaroni and boil it in water. Do not cook it till it’s well cooked, a little before is when you want to stop. Drain the water out and give the macaroni a cold water bath. Set aside.

Let’s make the cheese mix now, which is just like making rue. In a saucepan, melt the butter on medium heat.

Add the flour and keep whisking for 4-5 minutes. You don’t want any lumps.

Add the milk very slowly and whisk making sure again that there are no lumps. Also add the garlic and mustard and let this cook for about 5 minutes.

Now is the time to make it sinfully good… add the cheddar and Gruyere cheeses and stir until it’s all melted.

Add the black pepper powder as well. The sauce is now ready.

Take it off the heat and toss the macaroni in.

Transfer this to 6 individual ramekins and top each of them with 1 teaspoon of parmesan cheese.

Bake for 20 minutes or until it’s nice and bubbling and golden.

Relax on the couch with your lovely warm mac n cheese, a friend for ever.
